PORK & POTATO KEBABS
These kebabs make a whole meal all by itself. What more can you ask for? INGREDIENTS:- 1 boneless pork roast, about 1 1/2 pounds
- 2 pounds small red potatoes
- 1/3 cup white wine
- 4-6 cloves of garlic, minced
- 1 teaspoon lemon zest
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- olive oil
- 6-8 skewers
PREPARATION:Cut pork roast into 1 inch cubes and place into a large reseable plastic bag. Combine marinade ingredients in a small bowl. Pour mixture over pork, seal bag, and allow to marinate in refrigerator for 2-6 hours. While pork is marinating, place potatoes in a large saucepan. Allow potatoes to cook for 15-18 minutes. Remove from heat, drain, and rinse with cold water. Preheat grill for medium heat.
